How to Choose Frozen Pastries for Foodservice Supply

Start with the bake-off program
Hotels, cafes, and bakery chains usually care more about consistent oven performance than about catalog variety. Confirm whether you need pre-proofed croissants, ready-to-bake laminated formats, or filled SKUs that finish quickly during peak service.
Evaluate texture after bake
Ask suppliers for bake guidance and sample packs. Check flakiness, filling stability, and hold time on the counter. Small differences in dough lamination and freezer handling show up quickly once the product reaches staff and guests.
Align packaging with your channel
Foodservice buyers often need case packs that fit freezer space and portion planning. Retail bake-off programs may prefer smaller multipacks. Share expected weekly volume early so MOQ, lead time, and packaging can be quoted realistically.
